We were having this same problem last night. I made eggs after realizing I didn't have the spinach to make the beet salad I wanted.

i'm struggling with this right now too. it's too hot to eat much and i have little desire to stand and cook anything.
quinoa ... rice & tofu & cole slaw mix with peanut sauce ... hummus & rice cake (i can't have pita) ... nothing really sounds to be what I really want to eat. *sigh*

Try gazpacho or tabouli. Wonderful on a hot day served with pita bread.

Or pasta salad. You can put anything in it. It does involve cooking the pasta, but then you mix in whatever veggies you want and Italian dressing and bam! Food!
